Clam Succotash

Chopped bacon sautéed with Gourmet Chopped Ocean Clams, reserved clam juice, lima beans, sweet corn, okra, onion, garlic and herbs.

Yield: 4 Servings


In a medium sauté pan, heat up the vegetable oil on medium heat. Add in the onion, okra, red bell pepper, thyme and garlic, then cook for 3-4 minutes, or until the onion is translucent. Add in the Gourmet Chopped Ocean Clams, bacon, lima beans, corn kernels, 2 Tbsp. of reserved clam juice, salt and black pepper. Sauté the mixture for another 3-4 minutes, or until heated throughout. Place the mixture into a serving dish and garnish with parsley.

juice drained & reserved
1 Tbsp.     Vegetable Oil
½ Cup      Onion, diced
½ Cup     Okra, sliced
½ Cup       Red Bell Pepper, diced
2 Tsp.        Thyme, chopped
1 Tbsp.      Garlic, minced
½ Cup        Bacon, cooked & chopped
½ Cup        Lima Beans, prepared
½ Cup        Corn Kernels
To Taste      Salt & Black Pepper
Garnish       Parsley, chopped
