BLT Clam Wrap
Add a twist to your traditional BLT, add clams and wrap it up for a powerful protein punch!
Sauté clams in olive oil over medium heat until clams start to become firm and tender. In a mixing bowl combine clam meat and bacon. Lay each warm tortilla on a clean work surface. Brush mayonnaise on the tortilla; sprinkle lettuce and tomatoes over the tortilla. Top with 5 oz. of the clam meat and bacon mixture. Fold ends of the tortilla, roll and wrap.
Yield: 12 servings

- 1½ strips of bacon, cooked and chopped
- 2 Cups iceberg lettuce, shredded
- 2 Cups tomatoes, diced
- ½ Cup olive oi
- l12 12″ flour tortillas, baked 2-3 minutes or warmed on griddle for 15 seconds
