Clam Fritters
Clam Fritters are similar to a clam cake but the main difference is that a fritter is held together with batter rather than just breadcrumbs and eggs. Serve with your favorite dipping sauce.
Instructions
Turn on fryer to 350 degrees F. Mix all dry ingredients in a separate bowl and set aside. Mix butter, eggs, concentrated juice, and milk, in a separate bowl, and whisk. Combine all ingredients except clam meat and whisk until smooth. Fold in the clam meat. Scoop with 2oz ice cream scoop and place in fryer for 2-4 minutes. Fry until a deep golden brown. Drain on paper towels, eat and enjoy.

51oz Sea Watch Chopped Sea Clams, drained and reserved juice
2cups Flour
1tsp Baking Powder
1 ½ tsp Salt
1 ½ tsp Black Pepper
3/4 cup Milk
4 tbp Butter, unsalted, room temp
2 ea Eggs
¼ cup Clam Juice, reserved
1tbsp Garlic, minced
