Chipotle Clam Fritters

We spiced up these clam fritters with chipotle pepper sauce. If you like a more traditional clam fritter we have a recipe for those too!


Heat oil in deep pan or deep fry to 350 degrees. Combine flour, corn meal, salt and baking powder in one bowl. Mix eggs, juice and beer in another bowl. Pour egg mixture into dry ingredient add spices, honey and clams. Mix until ingredients are well combined. Let mixture sit for least 30 minutes in refrigerator. Scoop tablespoon sized balls into oil. Fry until golden brown and reach an internal temperature of 160 degrees. Balls will float to surface of oil. Take out and place on paper towel to soak up oil.

Yield: Makes about 2 dozen

  • 1½ Cups Sea Watch Chopped IQF Clams, thawed
  • 1 Cup Flour
  • 1 Cup Cornmeal
  • 1 Tbsp. Baking Powder
  • 2 Eggs
  • ¾ Cup Beer
  • ¼ Cup Sea Watch Clam Juice
  • 1 Tbsp. Old Bay
  • 1 Tbsp. Dry Parsley
  • 1 Tsp. Salt
  • ¼ Cup Chipotle Pepper Sauce
  • 2 Tbsp. Honey

Dipping Sauce:

  • ½ Cup Mayonnaise, reduced fat
  • 1 Tbsp. Chipotle Pepper Sauce
  • ½ Lemon juice
