Clam Puffs

Instructions

Puff Mixture:

Sauté onion and celery until transparent. Drain off liquid. In a large bowl, combine clams and juice, celery, onion, lemon juice, parsley, spices, cream, 2 eggs, and 2 cups of breadcrumbs. Chill for 1 hour.

Egg Coating:

Combine remaining eggs and 1 cup milk, blend together. Form puff mixture into silver dollar size balls. Roll in flour; dip into egg mixture, coat with remaining breadcrumbs. Deep fry for approximately 10 minutes at 350ºF. Serve warm.

  • 2/3 Cup butter
  • 2/3 Cup onion, minced
  • 2/3 Cup celery, minced
  • 14 Eggs
  • 6 Cups breadcrumbs
  • 1 Pint cream
  • 1/3 Cup lemon juice
  • 2 Tsp. parsley, chopped
  • 1 Tsp. salt
  • 1 Tsp. paprika
  • 1 Tsp. white pepper
  • 1 Cup milk
  • 2 Cups flour
