Southwestern Clam Hush Puppies
Cornmeal hush puppies made with Raw Chopped Sea Clams, sweet corn kernels, onion, garlic, cilantro, jalapeno and red bell peppers.
Instructions
Preheat a deep fryer to 350⁰F. In a large mixing bowl, whisk together the self-rising cornmeal, self-rising flour, double acting baking powder, chili powder, salt and black pepper. Fold in the Raw Chopped Sea Clams, eggs, white onion, jalapeno, red bell pepper, corn kernels, garlic, milk and cilantro until evenly distributed to make the hush puppy batter. Use an ice cream scoop to make hush puppies the desired size and gently place them into the deep fryer. Cook for 2-3 minutes, or until completely cooked.

1-16 oz. Raw Chopped Sea Clams
1 ½ Cups Self-Rising Cornmeal
1 Cup Self-Rising Flour
1 tsp. Double Acting Baking Powder
1 Tbsp. Chili Powder
To Taste Salt & Black Pepper
2 Each Eggs, Room Temperature
½ Cup White Onion, Diced
¼ Cup Jalapeno, Diced
¼ Cup Red Bell Pepper, Diced
½ Cup Corn Kernels
2 Tbsp. Garlic, Minced
¼ Cup Milk
2 Tbsp. Cilantro, Chopped & Divided
